I like to take my lunch to work, but on chilly days sometimes a cold sandwich just isn’t very appetizing, and sandwiches get boring.

When VitaClay came out with the personal sized slow cooker and yogurt maker (model VS7600-2) I realized it was so small and cute I could keep it on my desk at work. Now I can make a big batch of soup or stew and bring it to work without worrying about keeping it warm. Just prior to lunch time I just toss my lunch into the cute little clay pot and heat it up for a few minutes. Voila! A warm, healthy, hearty lunch fresh at my desk! You should see all of the co-workers that start hanging around my desk as the delicious aromas start wafting! You might have to bring enough to share!

This light, vegetarian soup is a wonderful lunch idea or a great appetizer for a nice dinner. And to “beef it up,” all you have to do is add… beef! (Or sausage, chicken, shrimp…)

    Black bean soup is delicious and filling. Adding meat adds flavor, fat and protein that makes it very satisfying, and will fill you up much longer than beans alone. Chorizo also has a nice spicy kick, and it flavors everything, so there is less need to add a lot of extra flavorings. Making this soup with homemade bone broth takes the nutritional score off the chart, because bone brothis a traditional, nutrient-dense superfood that has been used in every culture to boost immunity and build health.

    All the beans and veggies in this dish add fiber and bulk, which round out the flavor and nutrition. You’ll have no idea you’re eating something healthy--it’s that good! If you don’t have access to real chorizo, you can substitute any flavor of sausage, but also add a little bit of coconut oil to give it the right texture and consistency.

    It’s great to make a big batch of this in VitaClayso you’ll have leftovers all week--the flavors blend together more and more the longer it sits, and it will keep in the fridge for about a week!

    I love creamy, thick soups. They are so satisfying and filling, and the velvety texture just makes me want to eat more of it. With this soup, the “creaminess” comes from beans, so I have no guilt eating as much as I’d like--the more I eat, the longer I stay full!

    If you don’t blend this soup it has a completely different, chunky outcome, so it’s really like 2 soup recipes in one! Make a big batch and eat the chunky version one night, then blend it up the next day for a totally new experience! It’s great in a thermos at work, or you can heat it up at your desk using the VitaClay personal slow cooker and yogurt maker.

    The more you puree this soup the better the texture becomes. Round out this easy meatless soup with a green salad, or even add a few bacon bits to boost the satiety levels and add a salty crunch.

    Whenever I go to a sushi place, I always look forward to the miso soup. There is something so warm and comforting about it. Miso is also very nutritious: it is a fermented soy product that the Japanese have been using to benefit health for a long time.

    At first, I didn’t understand how to use Miso. I tried to cook it in soup and found out as a fermented product, it should remain raw. It is best stirred into a hot soup at the end and not cooked: it will dissolve as you stir it in and produce the lovely milky broth.

    This soup is great to keep on warm during rainy or chilly days to sip on all day long, or is a great first course for fish or stir fry.

    One of my favorite quick meals, for myself or my son, is a grilled cheese on sourdough (made on the griddle with lots of butter!) accompanied by warm tomato soup. Tomato soup is one of my favorites: it’s delicious, warm and satisfying. It’s great topped with sour cream or with a little cheese melted in, and it accompanies a sourdough grilled cheese like nothing else.

    I love tomato soup, but I don't like buying cans or even tetra-packs of pre-made soup. There are often preservatives, a lot of sodium, and possibly BPA in the lining of the packaging. So I like to make my own, but tomato soup can be time-consuming and labor-intensive, so I came up with a simple hack.

    I love fall! The air is crisp and clean, the leaves change colors, the rains come (in California) and I just start feeling festive.     They’re all over the place with their huge leaves that you lift up to find not one,not two, but like 8 huge butternut squashes! The vines grew into the pathways, through and in other trees and bushes (I’ve got some rose bushes, midget lemon trees…) So, naturally, I had to find a great recipe for butternut squash soup to make in my VitaClay - because butternut squash soup rocks. Butternut squash soup is deeply nourishing, filled with lots of bio-available nutrients especially when combined with a hearty bone broth. And it tastes great too!
