Spicy Black Bean Soup with Chorizo

Black bean soup is delicious and filling. Adding meat adds flavor, fat and protein that makes it very satisfying, and will fill you up much longer than beans alone. Chorizo also has a nice spicy kick, and it flavors everything, so there is less need to add a lot of extra flavorings. Making this soup with homemade bone broth takes the nutritional score off the chart, because bone brothis a traditional, nutrient-dense superfood that has been used in every culture to boost immunity and build health.

All the beans and veggies in this dish add fiber and bulk, which round out the flavor and nutrition. You’ll have no idea you’re eating something healthy--it’s that good! If you don’t have access to real chorizo, you can substitute any flavor of sausage, but also add a little bit of coconut oil to give it the right texture and consistency.

It’s great to make a big batch of this in VitaClayso you’ll have leftovers all week--the flavors blend together more and more the longer it sits, and it will keep in the fridge for about a week!

 

     

 

Ingredients:

  • 1 lb dried black beans, rinsed and sorted
  • 6 c broth
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 oz dry-cured Spanish chorizo, diced
  • 8 garlic cloves, minced
  • 2 tsp smoked Spanish paprika
  • 1 ½ tsp ground cumin
  • 1 tsp real salt
  • 1 tsp dried oregano
  • 1 cup sour cream (garnish)
  • Lime wedges (garnish)

Directions:

  1. The night before, soak the beans in water and a bit of salt as well as a dash of whey, lemon juice or vinegar.
  2. Before cooking, rinse and drain the beans.
  3. Load in all ingredients except garnishes in Vitaclay pot; cook on “soup” or “slow” for 1 hour.
  4. Skim and discard excess fat.
  5. Mash some of the beans to thicken the soup (a hand-immersion blender works well).
  6. Top each serving with sour cream, serve with lime wedges.
