Slow Cooked Moroccan Lentil Soup Recipe

Ingredients:

  • 2 cups chopped onions
  • 2 spoonfuls extra virgin olive oil
  • 2 cups chopped carrots
  • 4 cloves garlic, minced
  • 1 teaspoons ground cumin
  • 1 teaspoon  ground coriander
  • 1 teaspoonful ground turmeric
  • ¼ teaspoon ground cinnamon
  • ¼  teaspoon ground pepper
  • 1 ¾ cups lentils
  • 3 cups chopped cauliflower
  • 2 cups of water
  • 6 cups vegetable broth or reduced sodium chicken broth
  • 2 tablespoons lemon juice
  • ½ cup chopped fresh cilantro
  • 2 tablespoons tomato paste
  • 28 oz of diced tomatoes
  • 4 cups chopped fresh spinach or 10 oz of frozen chopped spinach, thawed

Preparation:

  1. Combine onions, carrots, garlic, oil, cumin, coriander, turmeric, cinnamon, and pepper in your VitaClay slow cooker.
  2. Add broth, water, cauliflower, lentils, tomato paste, and stir until well combined.
  3. Change cover and cook for 40 minutes to an hour or until lentils are tender
  4. During the last 30 minutes cooking, stir spinach.
  5. Just before serving stir in cilantro and lemon juice.
