Ham and Potato Chowder is Quick and Easy with VitaClay

There is just something about a good, thick potato chowder that warms my bones in the wintertime. Here in Northern California the sky is cloudy and cold, and there are showers threatening. On chilly, damp days like this I crave soup--and creamy chowders are most satisfying of all. 

This chowder is super simple to prepare and VitaClay takes care of all of the cooking, so go sit by the fire or get some of those chores done while dinner cooks itself! 

Use leftover ham and veggies if you have them, but even if you don't this delicious and hearty meal will only take minutes to prep for the cooker, and then just an hour to cook! 

     

Ingredients

  • 5 cups chicken broth
  • 2 cups half & half
  • 1 container of cream of chicken soup
  • 2-3 potatoes, diced
  • 2 cups ham, diced
  • 1 lb corn kernels
  • 1 yellow onion, diced
  • 1/4 c butter
  • 1 t each dried pasley, dill, celery seed
  • salt & pepper to taste

 

Directions

  1. Add broth, half & half, and cream of chicken soup in VitaClay pot and stir
  2. Stir in potatoes, ham, corn, yellow onion and butter.
  3. Add parsley, dill, celery seed and salt and black pepper 
  4. Close, seal and cook on "soup" or "slow" for 1-2 hours
