Cinnamon, cardamom, maple and slow-stewed apples simmering into a delicate protein-rich amaranth porridge.

This nutrient-dense, deeply satisfying seasonal bowl (both gluten-free and vegan) is indeed a sacred morning ritual. The combination of light, sweet apples and earthy amaranth strikes a beautiful balance between grounding nourishment and gentle energy, helping us meet the day with presence, clarity and ease.

Beginning the day with something warm, intentional, and aligned with the season can be a true game-changer for our overall health and well-being. It’s incredible how much shifts, both in body and mind, when we begin to trust food as medicine. When we allow it, food can become a powerful ally on our healing journey.

Whether it’s late summer, early fall, or deep winter, this Ayurvedic-inspired breakfast is one of the best ways (and a favorite) to start the day off right. If you love apple pie, you’ll love this. Because honestly, who doesn’t want dessert for breakfast? Plus, it’s a great dish to prepare ahead of time and warm up to serve for the week ahead.

This Ayurvedic porridge is also great alternative to overnight oats or porridge! I hope you enjoy this hearty and nourishing bowl as much as I do :)

Ayurvedic Cardamom, Cinnamon Stewed Apple & Amaranth Bowl (High-Protein)

~Serves up to 4
~Ready in 50-60 minutes

~Stores in the fridge for up to 4 days

Stewed Apples Ingredients:

  • 1 large apple (Gala, Fuji, or Pink Lady), sliced or diced

  • 2 tablespoon maple syrup (can add more later to taste)

  • ½ teaspoon ground cinnamon

  • 6-8 whole cardamom pods (lightly crushed to release flavor and aroma)

  • 1 tablespoon ghee (optional, for added richness and healthy fat)

  • Pinch of sea salt

  • Splash of water (about 1/4 cup)

Directions:

Add all ingredients to your Vitaclay or a small pot. Use the “stew” option and let sit until the apples soften and begin to release their juices, about 10 minutes.

Amaranth Porridge Ingredients:

  • 1 cup amaranth (rinsed under cold water until water runs clear)

  • 2 cups water or milk of choice (almond or coconut milk add nice flavor)Once the apples have begun to release their juices, stir in the amaranth and liquid of choice.

Directions:

Allow everything to simmer together for 50-60 on “stew”, or until the amaranth is tender and the mixture thickens to a porridge-like consistency.

Optional Toppings:

  • Chopped dates

  • Coconut flakes

  • Nuts of choice

  • Maple syrup to sweeten bit more

To serve

Spoon into bowls and top with whatever your heart desires…a drizzle of maple syrup, a sprinkle of cinnamon, chopped dates or even some toasted nuts for added texture.
