One Pot Wednesdays - Quick, Easy Chicken Chili

Even though it's summer, I still like to have a hot meal at least once a day.

And no matter what the season, no one can argue that making meal prep easier and more efficient is a priceless proposition.

One pot meals are a luxury that I will not ever give up: whoever thought of a meal that is all prepped, made, and cooked in one pot was a genius!

Or maybe it's just common sense. Why do more work when less is just as delicious and healthy?

Give this yummy twist on the classic chili a try: the chicken gives it a unique flavor that adds a whole new dimension to chili night.

And it keeps well—so make a big batch and eat all week!

Ingredients:

  • 1 lb chicken (get organic or pastured-from-the-farm to avoid arsenicand other nasty stuff)
  • 1 red onion, chopped,
  • 1 bell pepper, seeded and chopped
  • 2-3 cloves garlic, minced or chopped
  • 2 lb kidney beans, soaked and cooked
  • 1 t chili powder
  • 3 c broth (make your own for free!)
  • ½ t black pepper
  • 1 t cumin
  • 1 t turmeric (because I add it to everything)
  • salt to taste
  • garnish with cilantro, parsley and sour cream (optional)

Directions:

  1. Add everything except garnishes to the VitaClay cooker
  2. Close, seal and cook on “stew” setting for about 1 hour
  3. Garnish with desired add-ons, and enjoy!
