Fish Tagine with Preserved Lemon & Mint

A Nourishing Clay Pot Recipe for the VitaClay Nourishing Pot

A classic Moroccan fish tagine celebrates simple, wholesome ingredients cooked slowly until they become deeply flavorful. Tender white fish is gently simmered with preserved lemon, tomatoes, vegetables, fragrant chermoula, and fresh mint. The VitaClay Nourishing Pot creates a moist, gentle cooking environment that keeps the fish succulent while allowing all the flavors to blend beautifully.

Cook Time: About 35 minutes


Ingredients

Chermoula Marinade

Prepare your favorite homemade or store-bought chermoula.

Reserve 2 teaspoons for cooking.

Fish Tagine

  • 2 lb fresh cod, haddock, halibut, sea bass, or other firm white fish, cut into large chunks
  • 2–3 tablespoons extra virgin olive oil
  • 1 red onion, finely chopped
  • 2 carrots, finely diced
  • 2 celery stalks, finely diced
  • 1 preserved lemon, finely chopped
  • 1 (14-ounce) can plum tomatoes with their juices
  • 1½ cups fish stock or water
  • ½ cup dry white wine or dry sherry (optional)
  • Sea salt and freshly ground black pepper
  • Fresh mint leaves, finely sliced

Marinate the Fish

Toss the fish pieces with the prepared chermoula, reserving 2 teaspoons for the sauce.

Cover and refrigerate for 1–2 hours.


VitaClay Cooking Directions

Step 1: Sauté the Vegetables

In a large saucepan over medium heat, warm the olive oil.

Add:

  • Onion
  • Carrots
  • Celery

Sauté for 8–10 minutes, until softened.

Stir in:

  • Preserved lemon
  • Reserved 2 teaspoons chermoula
  • Tomatoes with their juices

Cook another 5 minutes until fragrant.


Step 2: Transfer to VitaClay

Transfer the sautéed vegetable mixture into your VitaClay clay pot.

Add:

  • Fish stock (or water)
  • White wine or dry sherry (if using)

Cover with the clay lid.

Select Stew and cook for 20–25 minutes, until the vegetables are tender and the broth is flavorful.


Step 3: Cook the Fish

Gently nestle the marinated fish pieces into the hot broth.

Cover and continue cooking on Stew for 8–10 minutes, or until the fish flakes easily with a fork.

Avoid overcooking to preserve its delicate texture.


Step 4: Finish

Season with sea salt and freshly ground black pepper.

Sprinkle generously with:

  • Fresh shredded mint
  • Extra chopped preserved lemon, if desired

Serve immediately.

Serve with:

  • Fluffy couscous
  • Steamed jasmine rice
  • Brown rice
  • Quinoa
  • Warm artisan bread for soaking up the fragrant broth

A simple cucumber and tomato salad makes a refreshing accompaniment.
