4 chicken thighs (bone-in, skin optional)
¾–1 cup coconut milk or cream
2 cans organic tomato sauce
½ yellow onion, thinly sliced
2–3 garlic cloves, minced
1 Tbsp ginger, grated
1 Tbsp each: coriander, curry powder, turmeric
½ Tbsp cumin (seeds or ground)
2–3 Tbsp coconut sugar
Salt, to taste
1 Tbsp oil/ghee
Heat oil/ghee; sauté cumin, turmeric, curry, coriander, onion, and garlic for 3–5 minutes until aromatic.
Transfer to VitaClay; stir in tomato sauce, coconut milk, sugar, and salt.
Nestle chicken in sauce.
Stew for 45 minutes (30 minutes for boneless) until cooked through; optional extra 10–15 minutes for deeper flavor.
Let sit on Warm for 10–15 minutes. Serve over turmeric rice and garnish with cilantro.
