Easy One-Pot Pasta in the VitaClay Nourishing Pot

There’s something especially satisfying about a dinner that brings everything together in one pot. This easy One-Pot Pasta combines pasta, juicy cherry tomatoes, fresh vegetables, garlic, herbs, and your choice of protein for a comforting meal with minimal cleanup.

Made in the VitaClay Nourishing Pot, it’s an easy option for busy weeknights when you want a wholesome homemade dinner without spending the evening juggling multiple pots and pans.

Ingredients

  • 12 oz dry pasta
  • 2 cups cherry tomatoes, halved
  • ½ medium onion, thinly sliced
  • 3–4 garlic cloves, sliced
  • 1–2 cups vegetables of your choice
  • Fresh basil, plus Italian herbs to taste
  • 1–2 tablespoons olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 3 cups broth or water
  • Optional protein: chicken, sausage, meatballs, beans, or chickpeas

Vegetables such as zucchini, bell peppers, spinach, broccoli, mushrooms, or chopped carrots are all delicious options. Choose what you have on hand and make the recipe your own.

Nourishing Pot Directions

Add the dry pasta, vegetables, cherry tomatoes, onion, garlic, herbs, salt, and pepper to the clay pot.

Pour in 3 cups of broth or water, then drizzle the olive oil over the ingredients.

Select the ONE-POT setting and set the cooking time for approximately 20–30 minutes.

A Note About the ONE-POT Timer

The ONE-POT timer represents the cooking time after the Nourishing Pot initially reaches a boil.

The initial heat-up period is separate and will vary depending on the amount of food in the pot and the starting temperature of your ingredients.

For approximately four servings, begin with 20–30 minutes of cooking time after the pot reaches a boil. Stir and check the pasta toward the end of cooking so you can adjust the texture to your preference.

What If the Pasta Needs More Liquid?

Different pasta shapes absorb different amounts of liquid.

If your pasta looks too dry before it becomes tender, stir in an additional ¼–½ cup of hot broth or water and continue cooking until the pasta reaches your desired texture.

Adding Chicken, Sausage or Other Protein

You can turn this simple pasta into an even heartier one-pot dinner by adding chicken, sausage, meatballs, beans, or chickpeas.

If using raw meat or poultry, the cooking time may need to be extended. Always make sure meat and poultry reach a safe internal temperature before serving.

For an easy plant-based variation, try adding drained chickpeas or white beans.

The Finishing Touch

Once the pasta is tender, finish your meal with:

  • Fresh basil
  • Freshly grated Parmesan
  • A drizzle of good olive oil
  • Freshly cracked black pepper, if desired
