1. Add everything to your VitaClay.
Place the rotisserie chicken carcass into the VitaClay clay pot. Add the chopped onion, leek, carrots, celery, garlic, and bay leaves.
2. Add water.
Pour in enough water to cover the ingredients, taking care not to exceed the maximum fill level recommended for your VitaClay model.
3. Cook the broth.
Select the Soup setting and cook for approximately 4 hours, or use the Bone Broth setting if available on your VitaClay model.
4. Cool and strain.
Once cooking is complete, allow the broth to cool enough to handle safely. Strain out the chicken bones, vegetables, bay leaves, and other solids.
5. Store.
Transfer the strained broth into clean containers and refrigerate promptly. Use within approximately 4–5 days, or freeze portions for longer storage.
She prefers to leave the salt out while the broth is cooking and season it later when reheating.
That's an especially convenient approach when you're making broth to use in several different recipes. You can adjust the seasoning depending on whether the broth is going into soup, stew, grains, or another dish.
