VitaClay One-Pot Butternut Squash Mac and Cheese

WhatÔÇÖs better than Mac & Cheese? How about a Mac & Cheese thatÔÇÖs easy to make, takes minutes to prep and cook, and that is Weight-Watchers approved? This delicious ÔÇťhealthyÔÇŁ version of mac & cheese was adapted from a Weight Watchers recipe, and in VitaClay it is quick, easy and so delicious.

Making a healthy version of homemade Mac & Cheese has never been easier with VitaClay!


  • 2 c milk
  • 10 oz elbow macaroni
  • 1 t salt
  • 1 t Dijon mustard
  • ┬ż t onion powder
  • 1 pinch of nutmeg
  • 1 c water
  • 10 oz thawed frozen pureed butternut squash
  • 4 oz sharp Cheddar cheese, shredded
  • 1 T chopped chives for garnish


  1. Load all ingredients except cheddar cheese and chives in VitaClay: stir
  2. Close, seal and set on ÔÇťstewÔÇŁ for 30 minutes.
  3. Check on it in the middle, stirring to keep the pasta from sticking.
  4. When it beeps, open and add generous amounts of cheese, then close and let the cheese melt for about 5 minutes
  5. Serve garnished with chives, if desired

PER SERVING (1 Cup): 259cal, 3g total fat, 1g sat fat, 552mg sod, 44g total carb, 5g sugar, 2g fib, 14g prot.
