Fall is almost here, and with it the cool, crisp nights, bright, colorful leaves, and warm, satisfying dinners. Chili is a big favorite in my house, and I generally do a couple big batches a month when it’s cold, but the same recipe can start getting old after a while.
Beets are a great hormone-balancing food that nourish and bring healing to our bodies. It’s important for us to eat whole, organic foods cooked at home whenever possible, especially as cold & flu season approaches. We want our immune systems in tip-top shape for the winter!
This beet chili really is good, and I am adding it into my monthly meal rotation. I like to customize it a bit with sausage or ground meat as well, to make it into a full meal! Try it and let us know what you think!
Ingredients:
*Use organic ingredients whenever possible, especially root veggies, because they soak up toxins in the soil like a sponge.
Optional garnishes: sour cream, fresh herbs
