Vegan Creamy Mushroom Ramen

Indulge in the richness of Vegan Creamy Mushroom Ramen, a delectable plant-based dish that combines the earthy goodness of mushrooms with the comfort of creamy ramen.



  • 1/2¬†Tbsp¬†cooking oil¬†
  • 4¬†oz.¬†baby bella mushrooms¬†
  • 2¬†cups¬†vegetable broth¬†
  • 1¬†handful¬†fresh spinach¬†
  • 1¬†package¬†ramen noodles (discard seasoning)¬†
  • 1/2¬†cup¬†coconut milk (canned)


  1. Add all ingredients in your Vitalcay pot except spinach.
  2. Set on stew or fast to cook for 20 minutes. 
  3. At the end of cooking, add fresh spinach, and stir until the spinach is wilted. Pour the coconut milk into the pot and stir to combine.
  4. Serve the Vegan Creamy Coconut Ramen as-is, or with garnishes like green onion or chili garlic sauce.
