Tuscan Chicken and White Bean Soup (Video Recipe)

More great easy dinner ideas from vitaclay, why go out for a meal when you can have a healthy dinner right at home in your own VitaClay slow cooker!

Serves: 6

INGREDIENTS

  • 2 (15-oz.) cans white beans, drained and rinsed
  • 1 (15-oz.) can fire-roasted diced tomatoes (do not drain)
  • 2 cups sliced carrots
  • 1.5 cups diced celery
  • ½ cup diced white onion
  • 1 garlic clove, minced
  • 2 bay leaves
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1 tsp. dried rosemary (crush in hand)
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 (32-oz.) box chicken broth
  • 1.5 lbs. boneless skinless chicken breasts or dark meat (I personally prefer using dark meat as it brings out more flavor and more tender!)

Direction:

1. Load all ingredients in VitaClay Smart cooker (VF7900 or VF7700 or VM7800)

2. Set on "Stew" on VF7700 or VM7900, or "Fast" on VM7800 for 2 hours

3. When cooking completes, take out bay leaves and use folk to thread the meat Serve and enjoy!
