The Best Curried Rice: Delicious in Clay!

I love rice. My favorite is brown rice with butter; I guess it reminds me of meals in childhood.

That nutty, buttery flavor is just delicious. I can eat a big bowl of buttery brown rice and nothing else for a meal.

Some people prefer white rice, and still others prefer other varieties or a mixture of several different types.

No matter your preference, you’ll be amazed at the flavor and texture of rice cooked in clay. I couldn’t believe it the first time I tried rice made inVitaClay.

First of all, the cooker steams it up perfectly, and cooks it faster than any other rice cooker I’ve used before.

Second, it actually makes plain rice taste better. Whenever I do samples I encourage people to just try the rice by itself, and every time they say they can taste the difference.

Still, I like to mix it up with rice. I love coconut rice, and my favorite go-to is a fun recipe with turmeric powder, butter, coconut oil and a no-salt spice blend. That’s another one I eat by itself for a meal sometimes.

A recent concoction of mine is curried rice, and it is just as delicious, and adds even more nutrients to the pot. Try it and let me know what you think!

Ingredients:

  • 4 c rice, soaked (soak overnight in water with some salt)
  • 6 c water orbroth
  • 2 c coconut milk
  • 1 tturmericpowder
  • 1 t no salt spice blend
  • 1-2 t curry powder
  • 1 t sea salt
  • 1-2 T coconut oil

Directions:

  1. Add everything to the clay pot
  2. Set to “rice” or “brown rice,” depending on type
  3. Let it “rest” for at least 15 minutes after it beeps

Serves about 8.

This is great reheated–and I love to use VitaClay for that too.

Just stir up the rice in the pot, add a few tablespoons of water to the rice, and hit “reheat” (in the rice menu). In about 10 minutes it’ll be as good as it was freshly cooked!

It’s also super easy to mix it up. Add whatever you want to the cooking water: make it spicy or mild.

Toss in dried cranberries or raisins at the end, or mix in sausage or other meat and top with cilantro for a one-pot dish!
