quick and easy cajun rice

Ingredients:

  • 2 links of Andouille sausage/ hot links, cut into 1/2-inch slices
  • 1/2 lb of chicken thigh, cut into 1-inch cubes
  • 2 cups uncooked long-grain white rice, washed
  • 1 can of low-sodium chicken broth (14.5 oz)
  • 4 tbsp ketchup/tomato paste

Spices:

  • 1/2 bell pepper, diced
  • 1/2 red onion, diced
  • 1.5 tbsp Cajun powder
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/8 tsp cayenne pepper
  • 1/8 tsp freshly cracked black pepper

Chicken Marinate (with 1/2lb chicken)

  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder

Directions:

  1. Sauté sausage and chicken over medium heat until it’s brown on the outside (doesn’t need to be cooked)
  2.  Add veggie and sauté for a minute
  3. Add spices, stir until everything is well combined, and sauté for a minute.
  4.  Add ketchup mix well and turn off the stove.
  5.  In your cooker, add 2 cups of washed rice and 1 can of low-sodium chicken stock.
  6. Add the sauté mix and stir well.
  7. Cover with lid and turn on the cooker to regular rice mode
  8. Once the machine beeps and everything is cooked, mix them and enjoy!
