Soy-based Chicken Tofu Edamame Rice

Welcome to my one-pot meal series! Perfect for college students, busy people, or anyone with limited kitchen space! Let’s start with my soy-based Chicken Tofu Edamame Rice!

 

 

Ingredients:

  • 1/2 box of tofu, cubed
  • Handful (~1 cup)of edamame (I used frozen)
  • 1 cup of marinated chicken
  • 2 cups of uncooked rice

Chicken Marinate (with 1/2lb chicken)

  • 1/2 tsp salt
  • 1/2 tsp cooking wine (I use Shaoxing wine)
  • 1/2 tsp sesame oil
  • 1 tsp oyster sauce
  • 1 tsp light soy sauce
  • 1/2 tsp sugar
  • 1/2 tsp white pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp juice from grated ginger

Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp sesame oil
  • 1 tbsp juice from grated ginger
  • 1 tsp garlic powder
  • 1/2 tbsp sugar

Directions:

  1. Wash 2 cups of rice until it runs clear and add 2 cups of water to the pot
  2. Add 1/2 box of tofu (cubed), 1 cup of edamame, and 1 cup of marinated chicken on top of the rice
  3. Mix 2 tbsp soy sauce, 1 tbsp dark soy sauce, 1 tbsp Shaoxing wine, 1 tbsp sesame oil, 1 tbsp juice from grated ginger, 1 tsp garlic powder, and 1/2 tbsp sugar
  4. Drizzle the mixed sauce over the food and give it a quick mix
  5. Cover with lid and turn on the cooker to regular rice mode
  6. Once the machine beeps and everything is cooked, mix them and enjoy!
