The Best Classic Chili with Wholesome Ingredients

This yummy bowl of chili made from scratch, filled with wholesome fresh ingredients, tasted so much better! Soaked kidney beans cooked in VitaClay for only 45 minutes, then add the rest of ingredients to slow cook for the rest of time. OMG! Surprisingly delish! Total 2 hours! Your total prep time in VitaClay is only 10 minutes.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 pound 90% lean grass fed ground beef
  • 2 1/2 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 2 tablespoons granulated sugar
  • 2 tablespoons tomato paste
  • 1 tablespoon garlic powder
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cayenne pepper* -optional
  • 1 1/2 cups beef broth or filtered water
  • 3 diced tomatoes
  • 1 cup dry red kidney beans, soaked overnight and rinsed
  • 1 cup organic tomato sauce

Directions

1. Add soaked and drained red kidney beans and 4 cups water in your VitaClay. Set to cook for 2 hours.

2. Sauté onion garlic in olive oil in a sauce pan over medium heat for a few minutes. Add the ground beef to the pot. Break it apart with a wooden spoon. Cook for 6-7 minutes, until the beef is browned, stirring occasionally. Add the chili powder, cumin, sugar, tomato paste, garlic powder, salt, pepper, and optional cayenne. Stir until well combined.

3. About 45 minutes or an hour, your kidney beans are cooked, (drain some excess liquid from cooked beans as needed), add the meat mixture and the broth, diced tomatoes (with their juice), and tomato sauce. Stir well. And continue to cook for the rest of time.

Enjoy!
