Ingredients

  • 2 tablespoons olive oil (or 1 tablespoon olive oil + 1 tablespoon butter)
  • 2 tablespoons sliced almonds
  • 2 red onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch fresh ginger, grated
  • Pinch of saffron (optional)
  • 2 cinnamon sticks
  • 2 teaspoons ground coriander
  • 2½ pounds lamb shoulder, cut into 2-inch cubes
  • 12 pitted prunes
  • 6 dried apricots, halved
  • Zest of 1 orange
  • 2 tablespoons honey
  • 1½ cups beef or chicken broth
  • Sea salt and freshly ground black pepper
  • Fresh cilantro, chopped

Serve With

  • Couscous
  • Brown rice
  • Rustic sourdough bread
  • Fresh cucumber and tomato salad

Serves 4–6


VitaClay Cooking Directions

Step 1 – Build the Flavor

Heat olive oil in a large saucepan over medium heat.

Add:

  • Onion
  • Garlic
  • Ginger
  • Almonds

Cook for 8–10 minutes, stirring until softened and lightly golden.

Add:

  • Cinnamon
  • Coriander
  • Saffron (optional)

Cook another minute until fragrant.


Step 2 – Brown the Lamb

Add the lamb cubes.

Brown on all sides for about 5–7 minutes.

This step develops a richer, deeper flavor.


Step 3 – Transfer to VitaClay

Transfer everything to your VitaClay clay pot.

Add:

  • Broth
  • Orange zest

Cover with the clay lid.

Select Stew and cook for 1½–2 hours, or until the lamb is almost fork-tender.


Step 4 – Finish the Tagine

Add:

  • Prunes

Continue cooking on Stew for another 25–30 minutes, allowing the fruit to soften and naturally sweeten the sauce.

Taste and season with salt and pepper.


Step 5 – Serve

Remove the cinnamon sticks.

Sprinkle generously with fresh cilantro and toasted almonds.

Serve with warm couscous, steamed rice, or crusty bread to soak up the rich, fragrant sauce.
