ST. PATRICK'S Loaded Potato Soup in VitaClay Instant Clay Pot

Ingredients:

  • 1¬†tablespoon¬†butter or olive oil
  • 1¬†large onion¬†(chopped)
  • 2¬†cloves¬†garlic¬†(minced)
  • 4¬†stalks celery¬†(diced)
  • 2.5¬†lbs¬†potatoes¬†(about 5 cups, peeled and diced (into about ¬Ĺ inch cubes))
  • ¬ľ¬†teaspoon¬†dried thyme
  • ¬ľ¬†teaspoon¬†dried rosemary
  • ‚Öõ¬†teaspoon¬†ground nutmeg
  • 4 cups¬†(chicken) broth
  • Salt & pepper¬†(to taste)

Ingredients after cooking:

  • 1¬†cup¬†milk
  • 1-2¬†tablespoons¬†cornstarch
  • ¬Ĺ¬†cup¬†sour cream or homemade yogurt

Garnish:

  • Shredded cheddar, cooked bacon and chopped chives (optional)

Directions:

  1. Add all ingredients except garnish and ingredients after cooking in your vitaclay pot.
  2. Set on Stew or fast to cook for 30 - 40 minutes.
  3. At last 5 minutes of cooking, whisk the cornstarch into the milk, carefully stir into the soup and let it continue to simmer until thickened, about 2 - 5 minutes. 
  4.  Stir in sour cream or yogurt and serve with your favorite toppings.
