ST. PATRICK'S Loaded Potato Soup in VitaClay Instant Clay Pot
Ingredients:
1tablespoonbutter or olive oil
1large onion(chopped)
2clovesgarlic(minced)
4stalks celery(diced)
2.5lbspotatoes(about 5 cups, peeled and diced (into about ½ inch cubes))
¼teaspoondried thyme
¼teaspoondried rosemary
⅛teaspoonground nutmeg
4 cups (chicken) broth
Salt & pepper(to taste)
Ingredients after cooking:
1cupmilk
1-2tablespoonscornstarch
½cupsour cream or homemade yogurt
Garnish:
Shredded cheddar, cooked bacon and chopped chives (optional)
Directions:
Add all ingredients except garnish and ingredients after cooking in your vitaclay pot.
Set on Stew or fast to cook for 30 - 40 minutes.
At last 5 minutes of cooking, whisk the cornstarch into the milk, carefully stir into the soup and let it continue to simmer until thickened, about 2 - 5 minutes.
Stir in sour cream or yogurt and serve with your favorite toppings.
