1 1/2 lbs cod fillets
4-6 Tbsp unsalted butter, sliced
¼ tsp garlic powder
¾ tsp ground paprika
1 tsp fresh herbs (parsley or cilantro)
few lemon slices, drizzle for serving
2 medium potatoes, cut in cubes
1 cup cauliflower
Salt pepper to taste
1. Add 1/2 cup water in your clay pot.
2. Add veggies in water. Set on stew to cook for 20 -30 minutes.
3. Marinate cod with herbs in a container. At the last 5 minutes of cooking, add cod fillets on top of veggies. Place butter on top of cod fillets. Let it continue to cook until cod fillets are cooked through. Don’t overcook the cod, it will become mushy and completely fall apart.
4. Drizzle cod with fresh lemon juice and herbs. Serve immediately.
