Simple effortless keto, low carb or gluten free meatloaf on spaghetti squash, to help you lose weight!
Substitute flour with almond flour or flex seed flour and parmesan flavor and keep the juices in. The glaze is made with unsweetened ketchup.
2 lbs Ground beef
1/2 cup flax seed meal (or almond flour)
1/2 large Onion, diced
8 cloves Garlic, minced
3 oz tomato paste
2 tablespoons Worcestershire sauce or coconut amino
2 large Egg
1 tablespoon Italian seasoning
2 teaspoons Sea salt
1/2 teaspoon Black pepper
1/3 cup Sugar-free ketchup
In a bowl (that can fit inside your vita clay pot), combine the all ingredients except ketchup, and mix lightly with a fork. Don't mash or the meatloaf will be dense. Spread the ketchup evenly on top.
Add 1 cup water* (for VM7900 or VF7700 models) in your vitaclay pot, add a stream tray, and place the meatloaf bowl on top of the steamer. Set on Stew to cook for 40 minutes to 1 hour.
(optional) If cooking too long, there might be too much accumulated liquidy sauce on top of the meatloaf, you may thicken the sauce in a saucepan on a high heat for a few minutes, then add back on top of the meatloaf!
