Shredded Barbecue Chicken Sandwiches: Quick and Easy in Clay

Have you ever had one of those days when you’re just tired, and you don’t feel like adding one more thing to your to-do list for the day? There are so many things to do that you can’t even see to the bottom of the list, much less imagine getting everything done by the end of the day. Then you realize you haven’t thought about dinner.

That drive-through is looking really tempting right about now. All you have at home is a package of chicken, a bit of barbecue sauce, and onion and some bread. Perfect! You can make quick, easy, delicious shredded barbecue chicken sandwiches that everyone will love without you even breaking a sweat!


  • 1-2 lb boneless chicken (get organic to avoid arsenic and other nasties)
  • Barbecue sauce, to cover
  • 1 onion, chopped
  • Splash of broth (to keep everything wet)
  • A few dashes of turmeric (because I add it to everything)
  • Sourdough bread or rolls
  1. Add everything but the bread into the Vitaclay pot, stirring to coat
  2. Close, seal and cook on “stew” setting for 1 hour
  3. Using 2 forks, shred the meat and stir again to mix with the sauce
  4. Serve meat on bread
