Here’s a quick and easy recipe for a delicious, vegan Quinoa and black bean salad: perfect for a quick, delicious, healthy meal that will fill you up without weighing you down.

  1. Cook one cup Quinoa on the "white rice" setting with 2 cups of broth.
  2. It will be done to perfection in about 30 minutes.
  3. After it cools, mix with 1 cup of black beans, 1 cup chopped or canned tomatoes, a squeeze of lemon juice, a couple of chopped green onions, some salt and a tablespoon of olive oil.
  4. Mix well, top with cilantro and mozzarella and serve!
