Roasted Garlic Mashed Potatoes

Garlicky roasted potatoes made all in one pot!

Cook, serve, store all in one pot, and reduce your cleanup jobs!

We have reduced  the Food Network’s Roasted Garlic Mashed Potatoes recipe: Instead of cooking for an hour in the oven, cook it for only 30 minutes in your VitaClay! This will allow you to spend more time with your loved ones during the holidays!

Ingredients
  • 1 head garlic, peeled and mashed
  • Olive oil
  • 2 pounds red potatoes, washed well and quartered
  • Salt and freshly ground black pepper
  • 5 tablespoons butter
  • 3/4 cup heavy cream
Directions
  1. Add 1 cup water and chopped potatoes in your VitaClay pot. Set on Stew to cook for 30 minutes.
  2. While cooking potatoes, Sauté garlic in olive oil in a sauce pan over medium high heat on stove until garlic becomes lightly brown.
  3. Drain excess liquid in cooked potatoes. Mix with butter salt pepper cream and garlic and mash all together.
  4. Taste and season with salt and pepper.
