The kidney regulates fluid metabolism; supports keen hearing, healthy hair, and strong sexual function; it also supplies us with willpower and motivation. Between the two kidneys, at the small of the back, resides the ultimate life force known as the “The Gate of Vitality.”
Ingredients:
1 tbsp. olive oil
1 lb. ground spicy Italian sausage (optional if you want to do vegetarian version)
1 onion, chopped
1 red bell pepper, chopped
3 garlic cloves, chopped
1 1/2 tbsp. chili powder
2 tsp. ground cumin
1 tsp. kosher salt, plus more to taste
3/4 tsp. ground black pepper, plus more to taste
1/2 tsp. ground cinnamon
2 cups fire-roasted tomatoes, not drained
2 cups soaked kidney beans, drained and rinsed
2 cups soaked black beans, drained and rinsed
2 cups pumpkin, cut in cubes
2 1/2 c. chicken broth
Directions:
1. Sauté onion garlic pepper in a sauce pan over medium high heat. 2. Transfer to your clay pot. Add soaked beans and 6 to 8 cups water or broth and the rest of ingredients except sausages. Set to cook on stew or slow for 2-3 hours. 3. At the last 1 hour of cooking, add sausage to cook for the rest of hours.
