3 lbs short ribs about 3-4 short ribs
Salt to season evenly
1 medium onion sliced thickly
1 stalk of leak, chopped
1/3 cup bourbon or dry wine
1 tbsp paprika
1 tsp cayenne pepper
1 tbsp sugar
1-2 tbsp balsamic vinegar
3-4 cloves of garlic
Thyme 2 fresh thyme sprigs or 2 tbsp dry thyme
1. On a medium sauce pan, Sauté onion, brown the ribs on each side. Transfer to Vitaclay pot.
2. Add all ingredients in VitaClay pot
3. Set on “soup” for 3 hours to cook
Let it sit in warm for additional few hours to further season the flavor (optional)
Serve with green veggies and polenta or mashed potatoes and toasty bread...
