I’ve read so much about sweet potatoes and how they are really good for me. But I never fully realized their potential until recently. Sweet potato casserole and candied yams are good, but kind of a lot of trouble (for the holidays, but not all the time).
Could I just get an easy recipe that I can throw into my clay slow cooker? I ran across this recipe in a magazine a couple of years ago and earmarked it to try and adapt to VitaClay. I am so glad I did. This is one of the best dishes ever. If you want something unique to bring to a holiday party or pot luck, you’ve found it.
People will ask you for this recipe! Of course it has peanut butter, so let people know that in case of peanut allergies. But there is just something about the peanut butter that really brings out the sweetness of the sweet potatoes. The salty and sweet are perfectly balanced here, and the peanut flavor just makes it pop. Now I’m hungry.
