Meatless Monday Butternut Squash with Green Peas

For a meatless recipe to start the week clean and healthy, I highly recommend Butternut squash with green peas. Butternut squash is a rich source of powerful antioxidants that help prevent cellular damage and reduce inflammation, which may reduce your risk of several chronic diseases. It’s also packed with vitamin C, vitamin E, and beta-carotene. Green peas are loaded with heart-healthy minerals, such as magnesium, potassium, and calcium that are helpful in preventing high blood pressure. Fight against heart diseases, while filling up with a healthy, cheat-free dish for the day!

Ingredients:
  • 2 cups butternut squash
  • 2 cup English peas
  • 2 tablespoons olive oil.
  • 1/2 cup water

Directions:

  1. Add all ingredients and water in your Vitaclay pot.
  2. Set on “Stew” to cook for 30 minutes.
