VitaClay Does Meatless Monday! Lentil Soup with Goat Cheese Toast

Lentils are a favorite staple in the vegetarian kitchen. Packed full of protein, minerals and vitamins, this humble little legume packs a nutritional punch. Lentils come in several colors; and each color has its own unique nutritional profile, as well as a distinctive flavor. 

The goat cheese toast is an easy way to round out this recipe into a full meal. Top the lentil soup with a bit of sour cream or even mix in a spoonful of the goat cheese for even more flavor. The goat cheese has a bit of a tang that contrasts well with the smooth flavor of the lentils. 

The toast adds a crunchy bite that makes this meal very satisfying. Great for a Meatless Monday easy dinner! Just pop all of the soup ingredients into VitaClay and it's done!

 

     

Ingredients:

  • 1 small log chevre (goat cheese), 3-5 oz
  • 1 red onion (finely chopped)
  • ¼ cup chopped fresh chives
  • 3 t ground cumin
  • 1 garlic clove  (crushed)
  • 1 carrot (peeled and coarsely chopped)
  • 1 rutabega  (peeled and coarsely chopped)
  • 2 celery sticks (trimmed and coarsely chopped)
  • 1 c red lentils
  • 1 ½ - 2 lbs of diced tomatoes
  • 2 c broth
  • 1 baguette thinly sliced diagonally

Directions:

  1. Add all vegetables, garlic, lentils, cumin and broth. C
  2. Close, seal and cook on "soup" for 1 hour. 
  3. Toast bread lightly until slightly brown and crispy.
  4. Combine goat cheese and chives in a bowl and spread cheese over the toast.

Makes about 4-6 servings
