Get a quick and easy meal-prep with a pre-made chicken for your sandwiches, salads or stir-fries! Shredded chicken is great for busy lunches or last-minute stir fry dinners. I also make big batches to have some for a quick snack during the day. This simple, easy-peasy chicken recipe could really go a long way!

Ingredients:

  • 4 pounds chicken breast*
  • ½ cup water or chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Directions:

  1. Add all of the ingredients to your Clay pot
  2. Close the lid and cook on “Stew” for 1 hour or until the breast is tender and cooked through.
  3. Once done, shred the chicken with two forks.
  4. You can store the chicken in an air-tight container with the liquid to help keep the meat moist.
