Green Bean Casserole: Super Easy and Delicious in VitaClay!

Green bean casserole is one of those traditional Thanksgiving dishes that people look forward to every year. It’s delicious, comforting and nostalgic for a lot of people.

Unfortunately, most people just buy a can of condensed mushroom soup and follow the directions on the back of the can, using canned green beans, canned soup, canned fried onions… everything is packaged and processed. It tastes good! It’s what we are used to and what we look forward to, year after year.

We don’t even think about how much better it could be if we made it from scratch, much less believe we could actually do it. I didn’t. But the first time I made it I was blown away how good it was. Then I adapted the recipe to VitaClay and I couldn’t believe how easy it was and still so delicious.

I wasn’t sure it could work in a slow cooker, and I was delighted how well it came out–and of course VitaClay made it that much easier to make. So give it a try–make the green bean casserole from scratch this year and see how delicious home-made can be!

Ingredients for Super Easy Green Bean Casserole:

  • 2 lbs fresh green beans cut into one inch pieces
  • 4 slices of cooked bacon, chopped
  • 1/2 cup celery, chopped
  • 1/2 sweet onion, chopped
  • 8 oz mushrooms, chopped
  • 12 oz cream of mushroom soup (make it or buy it)
  • 2 cups of broth
  • 1 1/2 cups milk, cream or half & half
  • 2 cups french fried onion
  • salt and pepper to taste

Directions for Super Easy Green Bean Casserole:

  1. Place the green beans, half the bacon, celery, onion, bell pepper, soup and milk into your VitaClay slow cooker. Mix well to combine.
  2. Cover and cook on the “stew” setting for 1 hour until the green beans are tender.
  3. Move green bean mixture into a serving dish and sprinkle on the french fried onions and the remainder of the bacon.
  4. You can place in a 350 degree oven for 10-15 minutes to lightly brown the top (if desired, but it’s not necessary), then serve

You can also make this dish a day ahead without adding the toppings. On the day you want to serve; preheat oven to 350 degrees and add the toppings to your casserole. Place in the over for 10-15 minutes until lightly browned.
