Easy Simple Quick Coconut Curry Veggie Stew

Heads up, veggie lovers! Here's another healthy and delicious entry for a meatless one-pot meal for you. This amazing recipe is wholesome and nourishing; the creamy flavor of coconut milk is satisfyingly delicious! Added with a great blend of spices and a healthy choice of vegetables in vegetable broth, this recipe will surely be your family's new-found favorite!

Ingredients:

  • 2 cups organic unsweetened coconut milk (full fat)
  • 1 cup butternut squash
  • 2 tomatoes, chopped
  • 1 cup cauliflower
  • 1 medium eggplant, cut into 1-inch cubes
  • 2 carrots, cut into 1-inch pieces
  • 2 cups yams or potatoes, peeled and cut into 1-inch cubes
  • 2 cups veggie stock
  • 1 tablespoon curry powder
  • 1 red bell pepper, cut in 1-inch pieces
  • 1/4 tablespoon turmeric powder
  • 2 tablespoon garam masala
  • 1/2 tablespoon Kosher salt
  • 1/4 tablespoon ground black pepper
  • 1/2 large onion, diced
  • 2-3 clove garlic, minced
  • Juice of 1 lime


Directions:
1. Add all ingredients to the clay pot. Whisk to combine.
2. Set on “STEW” or “Fast” to cook for 40 minutes to 1 hour.
