Tender Juicy Short Ribs Slowly Braised in Red Wine Sauce in VitaClay Slow Cooker

Ingredients:

  • Olive oil, for frying
  • 4-6 thick-cut meaty beef short ribs
  • 1 large head of garlic, peeled
  • 1 heaped tbsp tomato purée
  • 1 cup red wine
  • 1/2 cup-1 beef stock (optional)
  • 1 large potato, cut in cubes
  • Sea salt and freshly ground black pepper
  • Chopped flat-leaf parsley, to garnish.

Directions:

  1. Brown the ribs (optional)- In a saucepan, on medium-high heat. Saute onion and garlic for 3-5 minutes. Sear the ribs and brown on each side. Transfer to your VitaClay pot.
  2. Add the rest of ingredients and red wine in your Vitaclay, except garnish.
  3. Cover your cover with lids. Set on "SOUP" to cook for 2.5-3 hours.
  4. When ribs are cooked tender, transfer the rib juice and ribs to a saucepan. On medium-high heat, heat the ribs and its juice until the juice evaporates out to further coat the ribs to brown.
  5. Serve with potato, Brussel sprouts and kale Enjoy!
