Immune-Boosting, Energy-Building Green Chile Pork Soup
This sick season, load up with Vitamin C and beta-carotene with green chilies for healthy eyes, skin and immune system. Green chilies are also a natural source of iron which is great for iron-deficient people. Infuse it pork, beans, peppers, russet potatoes, onions, and roasted corn to make a hearty, filling lunch or dinner. This soup recipe is packed with protein for extra energy for the day!
Ingredients:
4 cups chicken broth
1 pound pork tenderloin, cut into 1-inch chunks
2 cups 3/4-inch chunks peeled russet potatoes
2 cups frozen roasted whole kernel corn
2 cups cooked cannellini beans, rinsed and drained
1 medium poblano pepper, chopped
1 4-ounce can diced green chiles
1/2 cup chopped onion
2 Tbsp lime juice
1 Tbsp chili powder
1 tsp ground cumin
1/4 tsp salt
1/4 tsp black pepper
1/4 cup snipped fresh cilantro
Fat-free plain Greek yogurt (optional)
Directions:
In your VitaClay slow cooker, combine the first 13 ingredients (through black pepper).
Cover and cook on “stew” for 1 hour.
Top with cilantro and Greek yogurt before serving.
