Creamy Curried Butternut Bisque Soup

We modified this recipe of Detoxinista from MEGAN GILMORE  to make it in VitaClay. 

 

Ingredients :

  • 1 teaspoon coconut oil
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 medium butternut squash, peeled, seeded and cut into chunks (about 3-4 cups)
  • 2 teaspoons curry powder
  • 3 cups of water
  • 1 teaspoon salt, or to taste
  • 1/2 cup almond milk, or non-dairy milk of choice
  • freshly ground nutmeg, to garnish

Directions : 

1. Load all ingredients into a clay pot, stir.
2. Cook on the "stew" setting for 30 minutes. If you have a hand-held immersion blender you can even puree all of it to make it smooth and creamy. 

Serve hot, with a sprinkling of freshly ground nutmeg on top!
