Chicken Breast With Potatoes

This is an easy and delicious one-pot meal made in a VitaChef Clay cooker.

PREP TIME: 15 minutes
COOK TIME: 2 hours
TOTAL TIME: 2 hours 15 minutes
YIELD: 4 SERVINGS
     
  • 1 pound of boneless skinless chicken breasts
  • 2 cups of chopped carrots
  • 7 medium potatoes peeled and chopped
  • 3/4 cups of white wine (Chablis works well)
  • 1/4 cup of olive oil
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of thyme powder
  • Salt to taste

Instructions

  1. Put rinsed chicken breasts in the bottom of the slow cooker
  2. Add the chopped carrots
  3. Add the potatoes
  4. Gently mix ingredients
  5. Add the wine
  6. Add the olive oil
  7. Add pepper and thyme
  8. Cover the ingredients with the VitaClay Chef lid
  9. Cook for two hours on the Slow Cook setting
  10. Add salt if needed

If possible stir this meal one hour into the cooking. If you can't do that or forget don't worry. It's a very forgiving recipe.
