What's not to love about chicken and gravy? This is a great comfort food meal for those days when the weather is gray, wet, and dreary. Just pop everything into VitaClay and dinner is ready when you are!

 

 

The clay does something to meat—without adding any water it brings out the juices in the meat and veggies, lets everything marinate while it’s cooking—and it all comes out delicious, with plenty of flavor and great texture.This is one comfort food that you can feel good about. It’s easy to make and it’s sure to become an instant family favorite.It also contains some great ingredients that add a lot of nutrition to the dish: broth, mushrooms, celery, onions, garlic, and potatoes (especially if you leave the skins on).

This dish is great served over rice, couscous, pasta, quinoa, or even sourdough bread, po-boy style! And the clay pot is so stylish you can serve it right out of the pot on the table! Just grab a trivet to go under it, because the pot will be hot!

Ingredients:

  • 4 chicken filets (breasts, thigh meat or even legs)
  • 4 potatoes, cut into large chunks
  • 2 stalks of celery, chopped
  • 2 large carrots, sliced
  • Several bella or crimini mushrooms, sliced
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • ½ cup broth
  • 1 package of organic cream of chicken, mushroom or celery soup
  • Several dashes of your favorite no-salt spice mix and powdered turmeric
Directions:
  1. Brown the chicken over medium heat in a cast iron skillet (optional)
  2. Layer the carrots, onion, mushrooms, garlic, celery and potatoes in the clay pot (make sure potatoes are on top of all other veggies)
  3. Pour the broth over the vegetables
  4. Add the chicken
  5. Add the soup
  6. Sprinkle in spices and turmeric
  7. Close up the cooker, set to “stew” for 1-1.5 hours
  8. Serve over your favorite grain (rice, millet, quinoa, couscous, sourdough bread...)
