Old Fashioned Chicken Noodle Soup for Vitaclay

There's really nothing more comforting when I'm sick than chicken noodle soup. I'm not sure if it's because I had it growing up, or if it really just is that nourishing and amazing for me when I'm sick. The fact is though if I'm fighting the flu or just generally under the weather, chicken noodle soup makes me feel better instantly.  And I'm convinced it speeds my recovery as well, but I suppose there's really no way to prove that.

Chicken noodle soup is a pretty simple affair in itself, but it requires a lot of babysitting and sometimes a mess if the pot boils over. So a few years ago I started using VitaClay to cook up chicken noodle soup whenever I needed it. And not only does it work great, the soup seems to taste even better than it ever did! Something about that clay seals in textures, flavors and nutrients like nothing else. So get a whole chicken and some veggies, grab your cooker, and let's get to work!

Ingredients:

  • 1 whole chicken (pastured or organic is best)
  • 3 whole carrots, peeled and chopped
  • 1 onion, chopped
  • 3 stalks celery, chopped
  • 5 cloves garlic, minced (more if you can stand it--garlic has great anti-viral properties!)
  • water to fill the pot
  • salt and pepper to taste
  • grated or powdered turmeric, because I add it to everything
  • your favorite no-salt spice blend
  • 1 cup noodles
Directions:
  1. Add everything except noodles to your 8 cup capacity VitaClay cooker
  2. Pour water over the top and sprinkle in the spices
  3. Set on "soup" setting for 2 hours
  4. Add the noodles in during the last 30 minutes of cooking for "al dente"
  5. Be amazed that your Chicken noodle soup just cooked itself!
