Are  you looking for a warm, satisfying breakfast that doesn't take too long to prepare and leaves you feeling energetic and ready to tackle the day?

This delicious porridge is made with quinoa, so it can be a welcome change from cold cereal or oatmeal. You can make it as sweet or bland as you'd like, and the fiber in the quinoa along with the protein in the milk and the nuts serve to keep you full for hours.

The cardamom is a great anti-oxidant and it adds a unique flavor as well. The cardamom can be substituted for another spice like nutmeg or cinnamon if desired.

Ingredients:

  • 1/2 c quinoa (rinsed)
  • 1c water
  • 1/2 t vanilla extract
  • 1/4 t coarse salt
  • 1/4 t ground cardamom
  • 1 3/4 c milk or almond milk
  • 4 T toasted slivered almonds (divided)
  • Saigon Cinnamon
  • Chopped dates, Raisins or dried cranberries (optional)

To Prepare:

  1. Combine the quinoa, water, vanilla extract, salt, and cardamom in your VitaClay cooker.
  2. Cook on rice setting; it should take about 20 minutes.
  3. When finished serve a scoop of the quinoa into the middle of a bowl.
  4. Pour about 1/2 cup of almond mild over the quinoa and garnish with almonds, dried fruit and cinnamon.
