Braised Pork Shank with Mashed Potatoes and Greens and Root Veggies

Fall in love with the succulent flavorful pork shank recipe slowly cooked to perfection, great with mashed potatoes and veggies! Yum! Veggies are packed with vitamins and minerals good for the body to boost the immune system. With mashed potatoes on the side, dinner's complete and ready!

Ingredients:

  • 1/2 cup all-purpose flour
  • 2 tablespoons chile powder
  • Kosher salt and freshly ground pepper
  • 6 pork shanks, about 1 1/2 pounds each
  • 1/4 cup extra-virgin olive oil
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 2 medium celery ribs, chopped
  • 6 garlic cloves, minced
  • 1 cup dry white wine
  • 6 cups chicken stock or low-sodium broth
  • 3 rosemary sprigs
  • 2 bay leaves
  • 2 thyme sprigs
Directions:
1. Add the onion, carrots, celery, and garlic to a large skillet and cook over moderate heat until softened about 5 minutes.
2. Add 2 tablespoons of the olive oil, add the pork shanks and cook over moderately high heat until browned all over, about 10 minutes. Transfer the browned shanks to your Vitaclay pot.
3. Add the rest of the ingredients in your clay pot and mix well.
4. Set on “soup” or “slow” for 2-3 hours.
