Authentic Japanese Unagi: A Perfect One-Pot  in VitaClay

When you travel to Japan, Unagi is one of their popular dishes. But with VitaClay, you don’t need to travel far or go to sushi restaurants to get an authentic unagi of yours. You can easily make it in your one-pot rice dish. You can also substitute eel fish with salmon as you wish! Oishī!


INGREDIENTS

  • 2 fillets unagi (eel) (about 12oz) (defrosted)
  • Japanese sansho pepper (toppings - optional)

Unagi Sauce (Unagi Tare): See Notes

  • ¼ cup soy sauce (Use GF soy sauce for Gluten Free)
  • ¼ cup mirin
  • 2½ Tbsp sugar
  • 1½ Tbsp sake

Unagi Sauce Recipe:

  • ¾ cup soy sauce
  • ¾ cup mirin
  • ½ cup sugar
  • ¼ cup sake.
Notes: Combine the ingredients in the saucepan. 
Reduce the sauce for 20 minutes, or until thicken (instead of 10 mins as written above).

 

Directions:

  1. In your VitaClay rice cooker, add 2 cups of short grain rice, white or brown, add 2 1/4 cups water for white rice, or 3 cups of brown rice.
  2. Set on rice cooking to cook automatically.
  3. At end of last 8 minutes to finish cooking, open your cooker, brush some of unagi sauce on each side of fish and place unagi fish on top of rice.
  4. Cover the cooker and continue to let it to cook for the rest of time. Let it sit in warm for additional 10 -15 minutes.
Top with sansho pepper and serve.
