Easy Curry Fish Stew in Coconut Sauce, cooked in VitaClay Fast Slow Cooker for 30 minutes

Ingredients

  • 1-2 pounds cod fillets
  • 1/4 cup lemon juice (from about 1 lemon)
  • 1 1/4 teaspoons salt
  • 2 cloves garlic
  • 4 teaspoons chopped fresh ginger
  • 1 cup canned unsweetened coconut milk
  • 1 tablespoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon brown sugar
  • 1/2 teaspoon fresh-ground black pepper
  • teaspoon turmeric
  • 1 teaspoon cayenne
  • 3 tablespoons Cooking oil
  • 1 onion, chopped
  • 1 tomato, chopped
  • 4 jalapeño peppers
  • 3/4 c. water

Directions

  1. Add all ingredients in your clay pot.
  2. Set on Stew or Fast to cook for 40 minutes.
  3. Add Cod fillet in the last 20 minutes of cooking.
