Baby kale is known to be a nutritional powerhouse and is rich in calcium and iron as well as vitamins A, C and K1. In order to be absorbed in the body vitamin K1 requires fats so be sure to prepare baby kale with a healthy oil to take full advantage of the nutritional properties.
Daikon has many amazing benefits that may include cancer prevention, stronger immune system lower inflammation, and improved digestion. Additionally, it might also help strengthen bones, detoxify the body, improve respiratory health, and stimulate weight loss.

Ingredients

  • 2 cups daikon, cut into cubes
  • 4 cups baby kale leaves
  • 6 cups veggie broth
  • 1 - 2 tablespoons olive oil

Directions

  1. Add all in your vitaclay # clay pot.
  2. Set on fast or stew for 30 minutes.

Note: you may add kale leave in the last 5 minutes of cooking to preserve its color.
