Yummy Split Pea Soup - Cook Once, Enjoy Leftover Twice!

Create the best, creamy split pea soup in your VitaClay! I love how the slow cooking process makes the split peas so thick and creamy while sipping into it the sweet, meaty flavor of ham. Whenever I have leftover ham on the fridge, I make it a point to cook this yummy, nourishing soup that’s packed with Fiber, B-Vitamins, and Protein. I usually make big batches to heat for breakfast the next day. Try it now!

Ingredients:
  • 7 cups water (ham or chicken stock)
  • 1 (16 ounce) package dried split peas, rinsed and sorted (2 1/4 Cups)
  • 1 teaspoon salt
  • 1⁄4 teaspoon pepper
  • 3 medium carrots, cut into 1/4 inch slices (1 1/2 Cups)
  • 2 stalks celery, finely chopped (1 Cup)
  • 1 medium onion, chopped (1/2 cup)
  • 1 2 lbs ham shanks or 2 lbs smoked pork hocks

Directions:
  1. Mix all ingredients except ham in your VitaClay slow cooker, then add ham on top.
  2. Cover and cook on “Slow Cooking - Soup” for 2 hours or until peas are tender
  3. Remove ham from the cooker and place it on a cutting board.
  4. Pull meat from bones, using 2 forks; discard bones and skin.
  5. Stir ham into soup. Stir well before serving.
