Ingredients:
1 cup quinoa, rinsed
1 1/2 cups water
2 cups veggies
2 fillets of salmon
1/2 cup onion
1 lemon juice
Sea salt and pepper to taste
2-3 tablespoons olive oil
Directions 1. Add quinoa and water in your Clay pot. Set “on white rice” to cook. 2. In a mixing bowl, add olive oil, lemon juice, sea salt, and pepper and mix well. Then add salmon fillets to coat well on each side. 3. After quinoa is cooked for 15-20 minutes, add salmon fillets on top of halfway cooked quinoa. Continue to cook for additional 15-20 minutes or until salmon fillets are cooked through. 4. (Optional) while cooking salmon and quinoa, sauté onion in a saucepan on medium-high heat until onion becomes translucent. 5. Garnish salmon with sautéed onion and serve with quinoa and greens.
