Steamed Salmon, Quinoa and Veggie for Dinner!

Keep your weight down during quarantine with this well-balanced meal with Steamed salmon, quinoa and veggies. Maintaining weight helps lower diseases such as heart disease, stroke, diabetes, and high blood pressure, and can also lower the risk of many different cancers. Keeping a balanced meal on the table is very important. Not only does it help you keep and maintain a normal weight, but it plays a great role in keeping your health at its best!

Ingredients:
  • 1 cup quinoa, rinsed
  • 1 1/2 cups water
  • 2 cups veggies
  • 2 fillets of salmon
  • 1/2 cup onion
  • 1 lemon juice
  • Sea salt and pepper to taste
  • 2-3 tablespoons olive oil

Directions
1. Add quinoa and water in your Clay pot. Set “on white rice” to cook.
2. In a mixing bowl, add olive oil, lemon juice, sea salt, and pepper and mix well. Then add salmon fillets to coat well on each side.
3. After quinoa is cooked for 15-20 minutes, add salmon fillets on top of halfway cooked quinoa. Continue to cook for additional 15-20 minutes or until salmon fillets are cooked through.
4. (Optional) while cooking salmon and quinoa, sauté onion in a saucepan on medium-high heat until onion becomes translucent.
5. Garnish salmon with sautéed onion and serve with quinoa and greens.
