Warm Quinoa Salad: Light, Quick and Easy in VitaClay!

It’s chilly pretty much year-round here in Northern California. As a Floridian transplant of 15 years, I am still not used to the cold weather. Sure, we don’t get snow or “real” cold, but it also rarely gets hot. We recently had a heat wave, and while everyone was melting in the 90-100+ degree weather, I was basking in the sun, feeling like I was back home again with the heat and humidity of my childhood.

Growing up in Florida, I developed a real love for salad. My mom was very health-conscious, so we had salad all the time—and when it’s super hot outside there just is really no desire for a hot, heavy meal. But when it’s cold I don’t want salad—so what’s a Florida girl to do?

When it’s hot I’ll eat a regular cold salad, but when it’s chilly, I’ve come to enjoy warm salads, like this one from Food Babe. With VitaClay I can make this salad with almost no effort, and eat a little bit every day!

Ingredients for Warm Quinoa Salad:

  • 1 c of uncooked quinoa (rinsed)
  • 1.5 c broth
  • ½ c chopped onions
  • ¼ t crushed red pepper
  • 2 c tomato sauce
  • 4-6 c arugula
  • 2 oz of raw parmesan cheese grated (Optional)

Directions For Warm Quinoa Salad:

  1. After rinsing, add quinoa broth, onions, red pepper and tomato sauce to VitaClay; stir
  2. Close, Seal and cook on “rice” (white rice setting).
  3. After the cooker beeps add arugula and stir into hot quinoa
  4. Re-close and seal and allow to rest (on warm) for 10-15 minutes
  5. Sprinkle with parmesan cheese and serve hot
