Leftover Stew in VitaClay: A Brunswick Tradition!

I love recipes that call for leftovers. I can use what's already in my fridge to create something new and delicious that doesn't taste like re-hash. I also love any excuse to use my VitaClay to cook a meal--because everything I cook in it tastes so great, and involves so little hassle. You can also customize it really easily: just make "left-over stew" with whatever you have in the refrigerator for a slightly different result every time.  

Mix it up to create your own family favorite with everybody's favorite vegetables and meats: this tasty meal can be cooked year-round without much effort at all!   When's the last time the easiest meal you make was also the tastiest and most satisfying?(But if it turns into a family favorite, you might have to stick to the recipe.)

Ingredients:

  • 3 cups shredded meat (chicken, beef and/or pork)
  • 1 cup broth
  • 1 small onion, diced
  • 2-3 red potatoes, diced
  • 1 cup cooked lima beans
  • 2 cups organic corn
  • 1 diced tomato
  • Squirt of organic ketchup
  • 1 T turbinado sugar
  • 1 T apple cider vinegar
  • 2 t Worcestershire sauce
  • 1 t your favorite no-salt seasoning blend
  • sprinkle of cayenne pepper (to taste)
  • dash of sea salt (to taste)
Directions:
  1. Add broth and meat to VitaClay pot. Layer all other ingredients into the pot and seal it up.
  2. Set cooker on "stew" setting for 1 hour.
  3. Serve warm. Garnish with cheese, sour cream, cilantro or parsley.
