⢠4 cups water
⢠1/2 tsp sea salt
⢠1 cup beets, peeled and diced into small cubes
⢠1/2 tsp dried thyme or rosemary (optional)
Add-ins (after cooking):
⢠1 cup cooked corn kernels (fresh, frozen, or grilled)
⢠1/2â3/4 cup black beans (optional for protein boost)
⢠1â2 Tbsp extra virgin olive oil
