Oriental Wehani Rice Salad: Exotic Made in Clay!

Rice recipes suitable ONLY for VF7700 and VM7900 Models with "rice" function.

Wehani rice is a very different rice experience: it's nutty, chewy and distinct; it's almost a different thing than rice entirely. There are a lot of nutritional benefits, including vitamins and minerals. Wehani rice is delicious and versatile and can be made in VitaClay just like any other rice--try it today! 

The dried fruits, veggies and sauce add a nice tang to this light, delicious meal. It makes a great snack or a wonderful side for chicken or fish. 

Oriental Wehani Rice Salad can also be prepared and served hot as a side dish with a protein like; duck, chicken of fish. If served cold it's a refreshing, light snack.

Ingredients:

  • 2 c LundbergFarms Weihani Rice
  • 1 c sliced green onion
  • 4 c of water or broth (2:1 water:rice)
  • 1 c Craisins
  • 1 1/2 c pomegranate seeds (optional)
  • 1 c dried apricot
  • 1 c chopped cilantro
  • 1 c diced yellow bell pepper
  • 1/2 c sweet chili sauce

Directions:

  1. Add rice and liquid to VitaClay Cooker. Choose the brown rice setting
  2. After it beeps (30-40 minutes) let it "rest" for another 15-20 minutes before opening.
  3. If serving as a salad, let rice cool and then add the rest of your ingredients except the chili sauce.
  4. When ready to serve, add sauce to taste. 
  5. Refrigerate for up to 3 days.
Yields about 6-8 servings
